  • 1 roasting chicken

  • 1 coconut milk

  • 2 canola oil

  • 1 onion

  • 4 garlic cloves

  • 2 1/2 galangal

  • 1 -3 ginger

  • 1 1/2 red chile

  • 1 brown sugar

  • 1 dark soy sauce

  • 5 tamarind paste

  • 1/2 fish sauce

  • 1 turmeric

  • 1 coriander powder

  • 1 1/2 ground cumin

  • 1/4 cinnamon

  • 1/4 nutmeg

  • 1 1/2 clove

  • 2, NA, NA, NA shrimp paste

  • star anise

  • fresh coriander

Directions: How to Make Chicken Rendang Curry

  1. Place all sauce ingredients in a food processor. Process well to form a thick curry paste or sauce.

Do not cover the wok/frying pan, as you want the sauce to reduce and become thicker., Allow the curry to simmer (stirring occasionally for up to one hour, or until meat is cooked and tender.   5. Garnish with a sprinkling of shredded coconut and fresh coriander (if desired. Serve hot with jasmine rice.
